Winemaking: A Celebration of Language, Culture, and Terroir
Afrikaans, one of our eleven official languages, is as rich in culture, history, and a sense of belonging as any of our other ten languages. Through wine, we celebrate all our languages as a cornerstone of our rainbow nation. This philosophy extends into the heart of our winemaking process, where each bottle tells a story of both tradition and innovation, bringing together diverse influences from across the land.
At the heart of this exquisite wine lies a marriage of two exceptional grape varieties, carefully sourced from distinct regions of South Africa. The robust and full-bodied Cabernet Sauvignon is harvested from the renowned Stellenbosch, while the delicately aromatic Cinsault comes from the sun-drenched slopes of Piekenierskloof.
The winemaking process begins with a meticulous hand in the vineyard, ensuring only the ripest, most flavorful grapes are chosen. Once in the cellar, the grapes undergo a rigorous process of destemming and crushing, preparing them for fermentation in open-top fermenters. Here, the fruit is lovingly nurtured with regular punch-downs up to four times a day. This careful attention to the fermentation process ensures that the desired flavors and tannin structure are extracted from the skins.
After fermentation and a period of maceration, the wine is pressed off the skins. The Cinsault is transferred into 500L seasoned French oak barrels, while the Cabernet Sauvignon is placed into 300L barrels, where they undergo a maturation period of 12 months. This aging process in oak imparts a subtle complexity and depth, enhancing the wine’s rich flavor profile.
Tasting Note: A Symphony of Flavors
This wine unveils a vibrant array of flavors, with the deep, dark fruit notes of black and red currants harmonizing beautifully with layers of dark chocolate, spices, and the aromatic complexity of fynbos—the iconic flora of South Africa. The palate is an intense journey, where black currant and black cherry dominate, their richness tempered by the youthful tannins that add structure and body.
The Cinsault, with its softer, juicier red fruit character, balances the bold tannins of the Cabernet Sauvignon, creating a seamless and harmonious mouthfeel. A zesty acidity cuts through the wine's ripe fruit profile, adding freshness and elevating the overall drinking experience.
The finish is long and lingering, with savory notes of black pepper and tobacco leaf giving depth and a touch of elegance to this beautifully crafted wine.
