Die Kwaai Braai Paai

Serves 6
Ingredients 2 sheets of puff pastry
2 double handfuls of chopped spinach
Any type of cooked meat, but smoked chicken breast is nice
250 gm bacon
1 large onion
1 red pepper
1 yellow pepper
250g mushrooms
100g Feta cheese
100g Cheddar cheese
100g Mozzarella cheese
1 egg
¼ cup milk
Method Thaw the dough and roll out on a cutting board in advance.

Fry the onion and bacon and let cool slightly.

Slice the meat, spinach, cheese and peppers coarsely.

Place first half of the raw spinach on the dough, pack the meat, bacon and onions, followed by the mushrooms.

Sprinkle Ina Paarman Rosemary and Olive spices, black pepper and a little bit of salt. The ingredients are quite salty so be careful with the salt.

Now add the three cheeses and finish off with the other half of the spinach.

Try to flatten this pile of ingredients as much as possible before putting the other layer of dough on top and fold the edges tightly. Brush the dough with a mixture of egg and milk

Use a sandwich grill with edges and cook the pie not too close to the coals. Turn constantly and cook for about 20 minutes until the pastry is nicely browned. Cut into portions and enjoy it.

For a vegetarian pie, the meat just to be left alone. It’s still delicious. Make your own combinations.

Notes This pie done on the coals is our favorite and we have tried many variations with different fillings. Some with meat and some completely vegetarian, for a vegetarian pie just don’t add meat, it’s still delicious. Try your own. The pie can be eaten the next day cold and is just as nice..
